Tosu Ramen and Sushi
Chieun Oh and Pilsun Kim, owners of Tosu Ramen and Sushi located at 213 E. Barnett Road in the WinCo Shopping Center here in Medford will be celebrating their One-Year Anniversary this month. “We named it Tosu because that is where I am from,” Chieun explained. “Tosu, Kyushu in Japan—where I was born and raised—is famous for Tonkotsu Ramen that we offer on our ramen menu. Since the Rogue Valley is my second hometown (she’s lived here for 30 years) I wanted to share my happy times in Japan, and share some of the good memories. And I wanted to bring something different and fun to the Rogue Valley.”
Chieun also comes from a family of business owners. “I have learned all my business skills from my parents and working in other restaurants,” Chieun continued. “This is my second business that I have owned. The previous business was successful, but we were ready to do something more, wanting to offer the Rogue Valley more varieties.”
Tosu offers three different kinds of ramen broth: Tonkotsu, Miso and Salt broths. Tonkotsu broth is made from pork bone broth and fat; it is nice creamy broth. Miso is made from miso paste that is fermented soybean; it has a very savory flavor. Salt broth is clear and light broth. You can add black garlic oil and/or red spicy flavor to get a kick to your ramen. Tonkotsu ramen is topped with chashu, bean sprouts, bamboo shoot, boiled egg, green onion and pickled red ginger. Miso ramen is topped with chashu, shiitake mushrooms, corn, green onion and pickled red ginger. Seafood shio ramen is topped with assortment of seafood, shrimp, scallop, clams, and green onion and pickled ginger. They also have teriyaki, tempura, and a great list of appetizers like takoyaki, gyoza, and chasu bun and more.
In addition, Tosu features a full sushi bar menu including nigiri, sashimi, rolls and chef’s special rolls. “Our most popular rolls are baked lobster tail rolls (crab meat, avocado roll topped with lobster tail, cheese and then baked) and our Wild Fire Roll (shrimp tempura, cream cheese, spicy tuna topped with lightly seared hamachi with fish eggs).
“We also have macaroon ice cream: green tea, mango, vanilla, cappuccino, and strawberry. We are the only restaurant in the Rogue Valley that carries this delicious dessert. It’s made in L.A. and express-delivered to us. We also have sake: Nigori, cold and hot sake, sparkling sake and draft beer. We offer something called the Rogue Beer which is a Japanese style beer made in Oregon.”
