Papa Murphy’s Take n’ Bake Pizza Celebrates 25 Years in Medford
Troy and Karen Irving, owners of Papa Murphy’s Take n’ Bake Pizza located at 1120 Biddle Rd., moved to Medford in 1991 from San Diego, CA. Troy was born and raised in San Diego and Karen from Boring, OR. “We wanted a safe community to raise our kids and to be able to afford a home,” Karen said. “Troy worked at Costco when they first opened. When we moved we had a 4 year-old daughter and I was expecting our second child.”
And then Karen’s parents, Don and Joan Wilson, approached the couple with a partnership opportunity to buy the local Papa Aldo’s (which would merge with Murphy’s Pizza in 1995 to be come Papa Murphy’s). “My parents owned two Papa Aldo’s in Portland. When the company upgraded it’s product to fresh dough made daily, added more toppings to the pizza, and lowered their prices, we wanted to be a part of the brand.”
So the couple opened their first location in June 1992 at the Bear Creek Shopping Center. “We continued our growth with a Klamath Falls and a Stewart Ave location in 1995, Central Point in 1996, Ashland in 1998 and White City in 1999.” (The Irvings have since sold Klamath Falls and Ashland locations.)
This July marked the 25th year for the Bear Creek Plaza location. To commemorate this occasion they closed for 3 weeks and underwent a huge remodel. “The whole store has been gutted,” Karen explained. “And we are upgrading our walk-in cooler, makelines and kitchen equipment. We are planning our Grand Re-Opening on August 1st. We hope this new look and design will ease operations and better serve our customers.”
And serving their customers is a top priority for the Irvings. “Our crew is led by experienced managers who focus on training for the best customer experience possible. We come in early to make fresh dough made daily in each location. We grate 100% real mozzarella cheese, hand slice fresh veggies, and have delicious protein options like chicken raised without antibiotics, premium Gallo Pepperoni and Italian sausage. Fresh is the name of the game as our stores do not have freezers.”
Papa Murphy’s offers, original, thin, or pan crust with your choice of sauce and toppings. “Since our pizzas are made to order, if you want a little more or a little less, we’ve got you covered. You take it home, pop it in your oven, and serve it fresh to your family. It’s a meal that makes everyone happy!”
Additionally, they offer original cheesy bread, 5 Cheese Scratch-made cheesy bread and 3 kinds of salads: Ceasar, Club and Veggie; and delicious chocolate chip cookie dough as well as s’mores.

We have the best management team led by our area supervisor, Erica Ritchie and our training manager, Cassandra Lunsford, both have been with us for 18 years!
